Cheese Potato & Smoked Sausage Casserole
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the sliced smoked sausage over medium heat for about 15 minutes, stirring frequently, until lightly browned. Remove from heat and set aside.
- Place the cooked and diced potatoes into a 2-quart casserole dish.
- In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until smooth and bubbly.
- Gradually add the milk, stirring constantly, until the mixture is smooth and thickened.
- Reduce heat to low. Stir in the salt, pepper, Velveeta cheese cubes, and shredded cheddar cheese. Continue stirring until cheeses are melted and the sauce is smooth.
- Pour the cheese sauce over the potatoes in the casserole dish. Add the cooked smoked sausage and gently stir to combine everything evenly.
- Sprinkle the top evenly with paprika.
- Bake uncovered in the preheated oven for 35-45 minutes or until bubbly and golden brown on top.
- Remove from the oven and let it sit for a few minutes before serving.
